The idea of eating coffee started as a question — could we enjoy the whole bean, not just the brew? That question became the foundation of Mokable’s journey from science to sustainability.
From Science to Sustainability
The Beginning
Mokable’s founder, Akinori Itoyama, with a PhD in molecular biology from Kyushu University, spent over a decade at Suntory Holdings developing iconic coffee brands and leading R&D strategy. Through his research, he uncovered a challenge in traditional brewing: up to 70% of the bean’s natural flavour and aroma are lost. This sparked a new idea: what if we could enjoy the whole bean, without waste?
From that question, Mokable was born. More than a product, its dream is to redefine coffee as a complete experience, transforming what is often discarded into something extraordinary rooted in flavor, sustainability, and innovation.

The Process
Micro-ground technology unlocks the full aroma and taste of coffee — 100% of it.
Instead of brewing, we take carefully roasted coffee beans and grind them into an ultra-fine powder, blending it directly into the base. This process transforms coffee into a versatile, aromatic ingredient that can be tasted, not just sipped.
At the heart of Mokable is this innovation — preserving what brewing leaves behind. Every particle of coffee retains its natural oil, flavor, and aroma, offering the full character of the bean in its purest form. From there, we craft with precision and respect for nature, blending the powder with sustainably sourced, plant-based ingredients that complement and enhance coffee’s essence rather than mask it.

Everything begins with the bean. We micro-grind whole specialty coffee to preserve every natural oil, note, and aroma — the pure essence of coffee in its most concentrated form. To create Mokable’s smooth melt, we blend it with ethically sourced, plant-based ingredients like shea and palm fruit oil. We use only sustainably sourced shea and palm fruit oils. Our shea is supplied by women-led cooperatives, supporting communities and ethical farming practices, while our palm oil is RSPO-certified to ensure environmental responsibility. Both plant-based oils give Mokable its smooth, chocolate-like mouthfeel.

about VOLCANCITO SHG
Volcancito SHG is a distinguished Costa Rican specialty coffee, cultivated between 1,250 and 1,700 meters in elevation by producer Alejo Khale Castro on the renowned Volcán Azul Estate. This washed Caturra, primarily from younger trees, is popularly roasted for espresso, offering notes of honey, dark chocolate, citrus, nuts, and caramel on a silky body.

about Yirgacheffe G1
A celebrated Ethiopian coffee grown at 1,700–2,200 meters in elevation in the Gedeo highlands. This washed heirloom varietal is prized for its clarity and refined character, offering bright acidity with notes of strawberry, jasmine, citrus, and stone fruit. With a light, tea-like body and floral aromatics, it is consistently rated as one of the top Arabica coffees in the world.
